Yummy Shrimp and Green Bean Dish

Paprika Shrimp & Green Bean Sauté

This shrimp recipe is a delicious and healthy Spanish inspired dish.  Make this into an easy, quick and healthy meal for 6 people by serving with quinoa or brown rice.

Ingredients:

4 cups green beans (trimmed), 3 tablespoons extra-virgin olive oil, 1/4 cup minced garlic, 2 teaspoons paprika, 1 pound raw shrimp (peeled and deveined), 2 16-ounce cans large butter beans or cannelloni beans (rinsed), 1/4 cup sherry vinegar or red-wine vinegar, 1/2 teaspoon salt, 1/2 cup chopped fresh parsley (divided), Freshly ground pepper to taste

Procedure:

1. Bring an inch of water to a boil in a pan.  Place the green beans in a steamer basket and place over the pan to steam for 4 to 6 minutes.
2. Heat oil in a pan over medium-high heat.  Sauté the garlic and paprika for 20 seconds until fragrant.  Add the shrimp and cook for 2 minutes until pink and opaque.  Add in the beans, vinegar and salt and cook for 2 minutes then add ¼ cup of parsley.
3. Place equal portions of green beans in six plates.  Top with the shrimp mixture and sprinkle with pepper and parsley.
