Turkey-Mushroom Burgers

If you want a healthy and lean alternative for ground beef used in making burger patties, try using ground turkey.  Although burgers made from turkey can be dry and bland, try adding mushrooms to the ground meat to make it moist and yummy.

Ingredients:

2 slices whole-wheat sandwich bread (crusts removed and torn into pieces), 8 ounces white mushrooms, 3 teaspoons extra-virgin olive oil, 1 medium finely chopped onion, 2 cloves minced garlic, 1 pound lean ground turkey breast, 1 large egg), 3 tablespoons chopped fresh dill, 1 1/2 tablespoons coarse-grained mustard, 1/2 teaspoon salt, 1/4 teaspoon freshly ground pepper, 6 whole-wheat buns, lettuce leaves & tomato slices

Procedure:

1. Crumble the bread by pulsing in a food processor then transfer in a large bowl. Pulse mushrooms in the food processor until finely chopped.

2. Heat 2 teaspoons of oil in a nonstick pan over medium heat.  Toss the onion, garlic and mushrooms in the pan, stirring occasionally, for 10 minutes until tender. Add the mushroom mixture to the breadcrumbs and let it cool completely.

3.   Combine ground turkey, egg, dill, mustard, salt, pepper and mushroom mixture.  Mix well until completely combined.  Wet hands and form six ½ inch thick patties.

4. In a preheated grill, brush the grill and the patties with oil.  Grill the patties for 5 minutes per side.  Split the buns and toast on the grill for 1 minute.

5.    Assemble the sandwich and garnish with lettuce and tomato.
