Healthy and Yummy Chocolate Dessert

Treat yourself to a yummy and healthy dessert with this warm chocolate pudding.  This easy and low fat pudding is made from high quality cocoa that gives it a deep chocolate flavor.

Ingredients:

1 large egg, 2 1/4 cups nonfat or low-fat milk, 2/3 cup sugar, 1/8 teaspoon salt, 2/3 cup unsweetened cocoa powder, 2 tablespoons cornstarch, 1 teaspoon vanilla extract

Procedure:

1. Beat the egg in a medium sized bowl.

2. Bring to a simmer 1 ½  cups of milk, 1/3 cup sugar and salt in a medium saucepan.  Stir occasionally.

3. In a separate bowl, whisk the remaining sugar, cocoa and cornstarch.  Add in the remaining milk until blended.  Whisk the hot milk mixture into the cocoa mixture and pour back into the pan and simmer over medium heat with occasional stirring for 3 minutes until glossy.  Remove from heat.

4. Take a small amount of hot cocoa mixture and add it to the beaten egg.  Add the egg and cocoa mixture to the rest of the cocoa mixture and cook over medium low heat, stirring constantly, until thick for about 2 minutes (do not boil the mixture).  Add in the vanilla extract.
