
This dish is great as a snack or as a meal. Make this into a meal by serving with grilled vegetables and a pilsner for a perfect summer supper.
Ingredients:
1 pound boneless and skinless chicken breasts (trimmed), 1 1/2 teaspoons store-bought garam masala, 3/4 teaspoon kosher salt, 1 cup thinly sliced seeded cucumber, 3/4 cup nonfat plain yogurt, 1 tablespoon chopped fresh cilantro or mint, 2 teaspoons lemon juice, freshly ground pepper, 4 6-inch whole-wheat pitas (warmed), 1 cup shredded romaine lettuce, 1 large tomato (sliced), 1/4 cup thinly sliced red onion
Preparation:
1. Preheat grill to medium-high and oil the grill.
2. Sprinkle chicken with 1 teaspoon garam masala and half a teaspoon of salt. Grill the chicken for 4 to 8 minutes per side, depending on the size of the breast. Remove from the grill and let rest for 5 minutes before slicing into thin strips.
3. Combine cucumber, yogurt, cilantro, lemon juice, ½ teaspoon garam masala, ¼ teaspoon salt and pepper in a medium-sized bowl.
4. Split open the warm pitas and fill with the thinly sliced grilled chicken, the prepared sauce, lettuce, tomato and onion.
