
This coming Valentines day, try serving a dish that is good for the heart. Fish is rich in omega 3 fatty acid that is good for the heart because it can help prevent certain heart diseases, stroke and heart attack. This salmon dish is not only good for the heart, it is absolutely tasty and easy to make. Make this into a meal by serving with brown rice with a side of sautéed red peppers and zucchini slices.
Ingredients:
1 minced scallion,, 2 tablespoons reduced-sodium soy sauce, 1 tablespoon rice vinegar, 1 tablespoon honey, 1 teaspoon minced fresh ginger, 1 pound center-cut salmon fillet( remove the skin and cut into 4 portions), 1 teaspoon toasted sesame seeds
Procedure:
1. Combine scallion, soy sauce, vinegar, honey and ginger in a medium sized bowl. Reserve some of the sauce and then marinate the fish in the mixture for 15 minutes.
2. Preheat broiler. Line a small baking pan with foil and coat with cooking spray.
3. Place the salmon in the pan skinned side down. Broil the salmon 4 to 6 inches away from the heat source for 6 to 10 minutes. Drizzle with the reserved sauce and garnish with toasted sesame seeds.
