Yummy Waffles To Start The Day Right

Eating Well Waffles

Breakfast is the most important meal of the day.  You need to eat a hearty, healthy and delicious breakfast to start the day and to keep you full and energize until the next meal time comes.

These waffles are a blend of whole wheat, flour and non fat buttermilk.  Top with fresh fruits like strawberries and yogurt to make it even tastier.

Ingredients:

1 cup whole-wheat flour, 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, 1/2 teaspoon salt, 1/4 teaspoon baking soda, 2 cups nonfat buttermilk, 1 large egg (separated), 1 tablespoon canola oil, 1 tablespoon vanilla extract (optional), 2 large egg whites, 2 tablespoons sugar

Procedure:

1. Combine whole wheat flour, all purpose flour, baking powder, salt and baking soda in a large bowl.  Whisk in the buttermilk, one egg yolk, oil and vanilla
2. Beat the 3 eggs whites in an electric mixer until soft and glossy.  Add the beaten egg whites into the batter and fold with a rubber spatula.
3. Preheat a waffle iron and brush the surface lightly with oil.  Fill the waffle iron two thirds full of batter and cook for 5 to 6 minutes until the waffle is crisp and golden.
